This session discusses increased risk of fires in commercial kitchens employing solid fuel cooking, resulting deposits of highly combustible creosote deposits in exhaust systems. Case studies will show how solid fuel cooking fires challenge conventional in-hood fire suppression systems and increase the need for strict adherence to code and standards requirements, requirements for clearance to combustible construction, and the need for increased frequency and aggressiveness of duct cleaning.
