Preface:

This is the third edition of CSA C22.2 No. 60335-2-42, Household and similar electrical appliances — Safety — Part 2-42: Particular requirements for commercial electric forced convection ovens, steam cookers and steam-convection ovens, which is an adoption, with Canadian deviations, of the identically titled IEC (International Electrotechnical Commission) Standard 60335-2-42 (edition 5:2002 consolidated with Amendment 1:2008 and Amendment 2:2017). It supersedes the previous edition published in 2001 as CAN/CSA-E60335-2-42 (adopted IEC 60335-2-42:2000). It also replaces the requirements for commercial electric forced convection ovens, steam cookers, and steam-convection ovens found in CSA C22.2 No. 109-17, Commercial cooking appliances. It is one in a series of Standards issued by CSA Group under Part II of the Canadian Electrical Code.

This Standard is intended to be used in conjunction with CAN/CSA-C22.2 No. 60335-1:16, Household and similar electrical appliances — Safety — Part 1: General requirements (adopted IEC 60335-1:2010+A1:2013, with Canadian deviations).

This Standard has been developed in compliance with Standards Council of Canada requirements for National Standards of Canada. It has been published as a National Standard of Canada by CSA Group.

Scope:

This International Standard deals with the safety of electrically operated commercial forced convection ovens, steam cookers, steam-convection ovens and, exclusive of any other use, steam generators, not intended for household and similar use, their rated voltage being not more than 250 V for single-phase appliances connected between one phase and neutral and 480 V for other appliances.

This standard deals also with electrically operated commercial forced convection ovens, steam cookers, steam-convection ovens intended for use on board ships, for which Annex AA is applicable.

NOTE 101 These appliances are used for commercial processing of food, for example in kitchens of restaurants, canteens, hospitals and in commercial enterprises such as bakeries, butcheries, etc.

The electrical part of appliances making use of other forms of energy is also within the scope of this standard.

As far as is practicable, this standard deals with the common hazards presented by these types of appliances.

NOTE 102 Attention is drawn to the fact that
  • for appliances intended to be used in vehicles or aircrafts, additional requirements may be necessary;
  • in many countries additional requirements are specified by the national health authorities, the national authorities responsible for the protection of labour, the national water supply authorities and similar authorities;
  • in many countries additional requirements are specified for pressure appliances.
NOTE 103 This standard does not apply to
  • appliances designed exclusively for industrial purposes;
  • appliances intended to be used in locations where special conditions prevail, such as the presence of a corrosive or explosive atmosphere (dust, vapour or gas);
  • appliances for continuous mass production of food;
  • microwave ovens (IEC 60335-2-90)
