Full Description



These standards cover the sanitary aspects of enclosed cheese vats and tables used in the batch production of cheese curd and open vats that are covered during mechanical cleaning. This standard does not include equipment with capabilities for pressing of curd.

In order to conform to these 3-A Sanitary Standards, enclosed cheese vats and tables shall conform to the following design, material and fabrication criteria.
